Do you like submarine sandwiches? Do you have a favorite place for subs? Our favorite place for subs is my kitchen. When you make your own subs, you can really control the freshness of the ingredients and use really good bread. Bread is what makes or breaks a sub, IMHO.
I prefer to use ciabatta rolls, crusty but not too crusty. After cutting, I scoop out some of the bread which creates a kind of "well" that really holds the fillings. For fillings, you can use anything that you can imagine. You can make it vegetarian or add some meat.
Tonight's fillings are vegetarian: roasted red pepper, onions, radishes, pickles (I prefer the flat sandwich slices), lettuce, swiss cheese and mustard. I usually use sprouts but the ones I had weren't very good so I used the lettuce. I like to use cheese because I warm the sub in the toaster oven and I really love the melted cheese. It sort of "glues" everything together.
If you use roasted red pepper and the pickles, be sure to drain them really well.
Other fillings I have used include avocado (sliced or mashed), cucumbers, tomatoes, pesto instead of mustard,
After I build the sub, I put in in the toaster oven at about 400 until it's warm, the cheese is melted and it's toasty.
